Ponmo, also spelled kpomo, is edible cow skin, the collagen-rich hide of the cow eaten once the hair is off. It is not tripe (that is shaki) and not reed (that is abodi). It cooks down soft and gelatinous and gives body to soups, from egusi to peppered ponmo.

What exactly is ponmo?

Ponmo is cow skin: the hide of the cow, cleaned and made edible. Customers know two types:

  • Brown ponmo (burned): the skin is first de-haired by machine and then singed over fire. That gives the brown colour, a mild smoky flavour and a firmer bite.
