Shaki is beef tripe: what it is and how to buy it

Shaki is beef tripe, the muscular lining of a cow's stomach. It is the Yoruba name for the cut, used across Nigeria, Ghana and the wider diaspora. Cleaned, scalded and frozen, it is one of the most reordered items in any African food shop, and the body of pepper soup, egusi and efo riro.

What exactly is shaki?

Shaki is the Nigerian (Yoruba) name commonly used for tripe: the muscular lining from a cow's stomach. In West African markets, shaki is typically sold cleaned, parboiled or scalded, and cut into pieces for cooking.

Many people use "shaki" as a general term for beef tripe. In culinary terms, tripe can come from different stomach chambers, which affects texture and appearance:

  • Honeycomb tripe (reticulum): with a honeycomb pattern
  • Blanket tripe (rumen): flatter texture
  • Book tripe (omasum): layered texture

Shaki by another name

Every community that cooks tripe has its own word for it. If a customer asks for any of these, they mean shaki.

Mogodu in South Africa and menudo in Mexico point to the same cut. Shaki is not abodi, which is beef reed, and not ponmo, which is cow skin. Those are separate products.

The four kinds of tripe

A cow has four stomach chambers, and each gives a different tripe. Knowing which is which helps a shop stock the right one.

ChamberTrade nameTexture
ReticulumHoneycomb tripe, the prized one, usually sold as shakiRaised honeycomb pattern, firm chew
RumenBlanket, flat or smooth tripeBroad and smooth, milder
OmasumBook or bible tripe, also called manifold, Yoruba onigbaaweMany thin leaves
AbomasumReed tripe, sold as abodiSmoother, a different bite

In Yoruba markets shaki itself is sorted further. Shakoto is the thick full sac, shaki onigbin is the smooth prized side.

Why shaki is popular

Shaki is popular because it:

  • Has a chewy, satisfying bite
  • Absorbs pepper, tomatoes, onions and spice blends very well
  • Adds texture to soups and stews
  • Fits many traditional dishes the diaspora in Europe miss

Used in: pepper soup, egusi soup, efo riro, okra soup, tomato-based stews, mixed meat soups.

For African stores, shaki is not a "nice-to-have", it is a core SKU for repeat customers.

  • Cut into pieces: pan-ready for the kitchen
  • Frozen: stable quality, reliable storage, easier distribution

Why source from a Netherlands-based supplier?

For African stores in the EU and UK the biggest pain is inconsistency: irregular availability, varying quality, cold chain issues, unreliable lead times. A Netherlands-based supplier with a professional cold chain offers:
